Brown Rice and Lentil Casserole

This is one of our new favorite dishes.  We love the texture of the lentils with the rice, plus it's super easy and cheap! All you do is dump everything together and then bake it. Tyson found this recipe here, but we have made a couple of changes.


3 cups broth (chicken or vegetable)
3/4 to 1 cup lentils (the original recipe says 3/4 cup, we've found that it is kind of soupy so we usually add a little more)
1/2 cup brown rice
3/4 cup chopped onion
Italian seasoning
Garlic powder
Chili powder or Cajun seasoning
1 cup grated cheese


Preheat oven to 300 degrees.  Mix all ingredients except the cheese in an 11X7 baking dish (We've also used an 8-inch round casserole dish). Cover with foil and bake for 1 hour.  Remove foil, add cheese, and bake for an additional 20 minutes.


Next time we make it we are going to try adding some broccoli.

  1. Are the lentils dry lentils or canned lentils?

  2. Dry lentils. I didn't know there were canned lentils! You put the lentils and rice in uncooked.
