CHOCOLATE ECLAIRS

Shell:

1 Cup water
1/2 Cup butter or margarine
1 Cup flour
4 eggs

Heat oven to 400 degrees.  Heat water and butter on stove to a rolling boil.  Turn off heat and stir in the flour vigorously for about 1 minute until mixture forms a ball.  Beat in the eggs all at one time (I like to use my mixer for this; it's easier) and continue beating until smooth.  Drop dough by scant 1/4 cupfuls 2 inches apart on ungreased baking sheet. (you can make them as big or small as you want)

Bake 35-40 minutes or until puffed and golden.  Cool.

Fill with vanilla pudding mixed with a little cool whip and frost with chocolate frosting.

Note:  Once the shells are filled, they need to be refrigerated.
